I love cooking and being in the kitchen. It’s my happy place, a place where I can unwind at the end of a busy day, throw on some good tunes, and create something delicious and nourishing for my family.
But sometimes when life gets a little crazy, I need a meal that I can throw together with ingredients I already have in my pantry, that requires minimal prep work, and that doesn’t require me to stand in from of the stove for an hour. This black bean soup is the answer my friends!
In just about 15 minutes you have a meal that is healthy, full of flavor, and packed with fiber and plant based protein.
I decided to blend my soup until it was a smooth and creamy consistency, but if you prefer some texture in your soup you could leave one can of beans out of the blender/food processor and add it to the pot when simmering.
Make sure you choose a salsa that you love since that is where the majority of the flavor comes from in this dish.
I topped my soup with cilantro, green onion and avocado but I’m sure a bit of shredded cheese, sour cream/plain Greek yogurt or crunched tortilla chips would also be delicious if that’s more your style 🙂
- 2 15 ounce cans black beans, drained and rinsed
- 16 ounces of salsa
- 1 cup vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Pinch of black pepper
- Optional toppings:
- Green onion
- Combine black beans, salsa, broth, cumin, and chili powder in a high speed blender or food processor. Blend until fairy smooth. Taste and season with black pepper as desired.
- Heat soup in a saucepan over medium heat until warmed through.
- Transfer to bowls and serve with desired toppings such as cilantro, green onion and avocado.
